Quick, easy and cost-effective summer snacks!

It's nearly Summer, so it's time for quick and easy snacks as opposed to warm complex cooked meals! Here are 5 great snacks, which are also cost effective.


Lemon Parsley Popcorn
Popcorn with a lemon twist!

Microwave the butter, parsley, lemon zest, salt, and pepper uncovered in a small microwave-safe bowl on high power for 1 minute or until butter is melted.

Place the hot popped corn in a serving bowl and pour the butter mixture over it.

Toss to blend and serve immediately.

Rosemarry Grilled Bread
The combination of sea salt, black pepper, rosemary and olive oil makes this truly outstanding.

Cut the bread into about 12 slices, about 3/4 of an inch thick.

Lightly coat both sides of the bread with olive oil. 3
To your liking sprinkle sea salt, pepper and rosemary on one side of the bread slices. Lightly press down on the spices to help them stick, then flip the slices over and sprinkle the spices on the other side.

Grill over medium high heat about 5 minutes on each side, until the bread is toasty and light grill marks appear.

Onion rolls
Even non-onion lovers love them!

Chop onions.

Place in frying pan with butter.

Fry for 20 minutes or until onions are limp.

Stir in cream cheese and grated swiss cheese.

Stir until melts.

Spread on tortillas.

Roll and refrigerate overnight.

To cook: Grease baking sheet.

Cut into 1" pieces.

Bake, upright, at 375 degrees for 10 minutes or until lightly brown.

Mango Salsa

Mix together 2 fresh mangoes, diced 1/4 cup crushed pineapple 1/4 red bell pepper, coarsely chopped 1/4 green bell pepper, coarsely chopped 1 jalapeno pepper, seeded and minced finely (optional) 2 tablespoons extra virgin olive oil 1 clove garlic, minced finely 1 shallot, finely diced 2 tablespoons chopped fresh cilantro, or parsley or 2 tablespoons parsley 2 teaspoons fresh lime juice, or lemon or 2 teaspoons lemon juice 1/2 teaspoon red pepper flakes (optional) salt and pepper (to season)  in a bowl.

Serve with chips or over grilled tuna, salmon, chicken or pork!

Quick and easy fruit dip
Definitely the easiest and quickest snack to make!

Mix cream cheese and marshmallow creme until smooth and it's ready to serve with the fruit.
